King Baby Bagels trades from units 5 and 6 in Alley 1 of the Grainger Market and makes its bagels the long way round: hand rolled, kettle boiled, then baked, which is what gives them the chew that steamed supermarket versions lack. The fillings are American in influence and generous in build, running to maple bacon, smoked salmon and mortadella ham alongside a proper vegan selection, with house names such as The O.G. and Baby Ru that regulars order by memory. It is a lunch stop rather than a bread shop, and it is consistently one of the busiest counters in the market.

The business has grown out of its single pitch and now also runs a residency counter inside the Fenwick Food Hall on Northumberland Street, a few minutes away, which is useful when the market is closed. The Grainger Market unit opens from half past eight Tuesday to Saturday, later on Monday, and shuts at four with the rest of the traders. Like most market food businesses it sells out of the popular fillings before the end of the day, so a late-afternoon visit is a gamble.
