Pure Knead

Sourdough bakery and cafe on the Dean Street slope, using a 48-hour process of flour, water and salt, with Assembly coffee.

About Pure Knead

Pure Knead began in 2015 as a stall on Tynemouth Market, opened a shop in Whitley Bay, and then took the Dean Street site on the slope between Grey Street and the Quayside, with a further unit in Gosforth. The bread is the point: a 48-hour process using only flour, water and salt, with no additives or improvers, which is a slower method than most bakery cafes bother with and shows in the crust.

Alongside the loaves and bakes there is a proper coffee offer, with beans from the London roastery Assembly pulled on a Victoria Arduino machine, so it holds its own as a coffee stop rather than simply being a bakery that also sells drinks. Dean Street is steep and narrow, and the shop is a useful halfway point between the Grainger Town streets at the top and the Quayside at the bottom. Monument Metro is around five minutes uphill.
